Tepache
Pineapple beer
Ingredients:
1 pineapple (organic, no chemicals added)
Half or one cup of sugar depending on taste
Additionally you can put a slice of ginger, a stick of cinnamon, or even some chili)
Water to cover.
Instructions:
Don’t wash the pineapple. Remove tops and peels of pineapple, leaving some fruit on each peel and reserving the fruit for another purpose.
Dissolve sugar in hot water. In a half a liter, non-reactive vessel, combine pineapple, sugar water, and additional water to cover.
Weight down the pineapple peelings to keep them below the level of the water.
Additionally you can put a slice of ginger, a stick of cinnamon, or even a slice of chili.
Cover the vessel.
Place in a warm spot and allow to ferment for 1 to 3 days, checking the flavor daily to achieve desired taste. The longer it ferments, the more fizzy and sour it will become.
Strain off and serve over ice as it is, or to produce a more carbonated beverage, place in airtight bottles 3 days into fermenting (before it becomes too fizzy), cap, and refrigerate immediately.
